BLACK BAR & GRILL SERVES UP LIMITED EDITION RARE TOMAHAWK
STEAK WITH A LUCKY PRICE TAG TO MATCH

Renowned for its decadent menu of dry-aged and wood-fired meats, BLACK Bar & Grill at The Star Sydney is adding one of the rarest and most exclusive cuts of Wagyu steak in the world to its menu this month, for a limited time only. 

The ‘Five 8s Lucky Tomahawk Steak’, named for its lucky price tag of $888.88, is the result of a long-term partnership between Executive Chef Dany Karam and Blackmore Wagyu, an award-winning and internationally-renowned Australian producer of 100% Fullblood Wagyu beef. 

With a marble score of 9+, each opulent 1.8kg tomahawk is simply seasoned with Murray River salt and then prepared on the wood-fire grill. Designed to share, the steak pairs perfectly with BLACK’s range of delicious side dishes such as a chimichurri dressing to complement the meat’s high marbling score or cornbread with CopperTree Farms Cultured Butter.

Karam explains, “At BLACK, we pride ourselves on using only the finest Australian produce so it is incredibly exciting to be one of only a handful of restaurants across Australia to have access to this remarkable produce.”

A Victorian cattle breeder, often considered the founding father of Wagyu in Australia, David Blackmore is responsible for importing more than 80% of the Wagyu genetics into the country between 1992 and 2004. Blackmore’s passion and dedication to all areas of the production life-cycle has led to the creation of one of the most premium Wagyu products in the world.

Of his collaboration with BLACK, Blackmore said, “We’ve always been incredibly selective in who we partner with, especially when we have cuts that are available in such limited quantities. We’ve loved working with Dany over the years and are confident that he will be able to do the unique flavours and fine texture of this stunning tomahawk justice that we have hand-selected.”

The ‘Five 8s Lucky Tomahawk Steak’ is available now. It is in line with Karam’s role as the Culinary Ambassador for the 2022 Sydney Autumn Racing Carnival, for which he has created a range of rich, flavourful menus featuring Blackmore wagyu.
